Carnival cookies Recipe:

  • Preparation time: 2 hours – Tempo di preparazione 2 ore
  • Ready in 2 hours – Pronto in 2 ore
  • Ingredients:
  • 300 gr of flour – farina bianca
  • 50 gr of butter – burro
  • 2 eggs – uova
  • 4 tablespoons of sugar – cucchiai di zucchero
  • 1 tablespoon of a sweet liqueur – cucchiaio di liquore dolce
  • a pinch of salt – un pizzico di sale
  • Icing sugar – zucchero a velo
  • Peanut oil – olio di semi

In a bowl mix the flour with the eggs, the sugar, the liqueur, and the butter and the salt. Mix with your hands until you get a smooth pastry (it may take a while).
Let the pastry rest for at least an hour(in a cool place).

Mettete sul piano di lavoro la farina, fate una fontana ed aggiungete il burro a pezzetti, lo zucchero, le uova, il liquore ed un pizzico di sale. Amalgamate con le mani in modo energico fino ad ottenere un pasta omogenea. Lasciatela riposare per almeno un’ora in un luogo fresco ed asciutto.

When the time is elapsed take the pastry and divide it into pieces. In the meantime put the oil on the fire.
Start rolling out the first piece until you have it high only few millimeters. divide it into strips, they can have an irregular shape! Put them in the hot oil and leave it there until golden brown. Repeat for all of them. Put in a bowl with blotting paper and cover with icing sugar, they are ready!

Mettete l’olio a scaldare sul fuoco e dividete la pasta in pezzetti, cominciate a stendere il primo fino ad ottenere uno strato di pochi millimetri, dividetelo in pezzetti
dalla forma irregolare e buttateli nell’olio caldo. Lasciateli cuocere fino a quando non saranno di un bel colore dorato girandoli di tanto in tanto. Ripetete per tutti i pezzetti di pasta.
Tolti dall’olio metteteli in una ciotola con la carta assorbente e copriteli di zucchero a velo!

Almond brittle (Grandmother recipe)

Almond brittle

At the beginning I just wanted to write a post with some photos of the sweet I made last weekend adding then a link to an external recipes’ site. Searching for the recipe I found there are not actually sites with the real italian one, the one mabe by my grandma, so here it is.

Brittle recipe:

  • preparation time: 30 min
  • Ready in: 2 h
  • Ingredients: For this recipe you need the same quantity of sugar and almonds and one orange. I made my brittle with 100 g of sugar and 100 g of almonds (this quantity is for 3 people).

Take a piece of greaseproof paper and put it on a flat surface.

Put your almonds for some minutes in your oven at medium heat on a baking pan, just a couple of minutes.

While your almonds are in the oven, put the sugar in a small heavy saucepan over medium heat, where it will start dissolving. Use a spoon to stirring it until it has the color of the honey.

When the sugar is dissolved and has the right color, take your almonds and put them in the saucepan and stir for 10 seconds, they will make a funny crackle.

Almond brittle

Put this mixture onto your prepared sheet and use the orange to roll out the mixture. The orange gives to your brittle an amazing scent. Leave it rest for half an hour and then break it into pieces.
