Mandarin cream

When I was a teen and my parents went out on Sunday with friends leaving me at home with the entire kitchen in my hands I used to prepare cookies and cakes. My mom had a beautiful recipes book full of amazing cake pics; I remember clearly that the very first day I’ve opened it searching for my first recipe ever, I’ve found this one. This recipe has a special place in my heart and every time I make it, it’s like I’m 13 again. Everithing is perfect if I cook with a beautiful Oasis song on the radio (better if it is “Live forever”) and if I leave my kitchen in terrible conditions πŸ™‚

Mandarin Cream

  • Preparation time: 30 minutes
  • Ready in: 1 hour
  • Ingredients:
  • Milk
  • 6 Mandarins
  • 40 g of flour
  • 80 g of sugar
  • 3 yolks
  • 6 cookies

First of all open your mandarins as in the image below and remove the pulp. Squeeze it, remove the peel and add to the juice some milk until you have 400 ml of liquid. In a bowl mix the yolks with the sugar adding then the flour and the liquid (juice + milk) slowly. Put on the fire stirring until the cream boil. Turn off the heat and let the cream stand a few minutes. In the meantime crumble your biscuits and put a small quantity in each empty mandarin. Then fill them with the cream. Let them rest for half an hour in the refrigerator. I decorated them with dried fruits.
